Farm News

Well, here’s the sharp transition from greens to warm season vegetables.  We have enough squash right now to feed a third world country!  Next week, we will put a cabbage back in the share, but as I was staring down two unused cabbages in my crisper yesterday, I thought we needed a break.  Basil is in the box this week and you should know right off the bat, basil doesn’t refrigerate or travel well.  When it gets to you tomorrow, it’s going to be wilted and may have dark spots on the leaves.  This is chilling injury from being in the cooler.  One of the downsides of being an all inclusive CSA is that some veggies in the box have a different cooling/storage requirement than others.  This doesn’t change the taste of the basil, but it is not going to be the centerpiece of the box.  Concentrate on the much awaited arrival of squash, cukes, eggplant and tomatoes!!

 

Thankfully, we missed the deluge at the end of last week.  Matt’s farm, about 30 minutes southwest of our farm, was under water with all of the rain and those of you in southern Queen Anne’s county were flooded!  We are very fortunate to not have had that much rain. 

 

Happy 4th of July everyone!  The harvest crew requested fireworks today.  We’ll have to settle for some lunchtime sparklers and a flag on the vegetable wagon as it heads to the packing shed filled with CSA veggiesJ

 

 

Recipes

Garlic Roasted Summer squash

Pineapple Jalapeno Coleslaw.  I made this recipe up last night.

1 head cabbage

1 jalapeno

1 pineapple

Olive oil

Rice vinegar

 

Directions:  chop the cabbage as you would for coleslaw and put in large bowl, add diced jalapeno to taste and toss together.  Cut pineapple in bite sized pieces and toss with cabbage/jalapeno.  Drizzle with olive oil and about a tablespoon of rice wine vinegar.  Add salt to taste.  There are a few jalapeno/pineapple recipes on the internet, but they all contain mayo.
